Malfroy's Gold is a natural beekeeping company specialising in producing pure varieties of Wild honey and honeycomb harvested from bee-friendly Warré hives. Our apiaries are located in the world heritage listed Blue Mountains and woodland forests of the Central Tablelands, NSW, Australia.
Our natural beekeeping practices surpass the national organic and international Demeter biodynamic guidelines for apiculture. We call our honey ‘Wild’ for this reason, as it is produced in an entirely natural way; by wild bees in a wild environment. Our Wild honey is produced from 100% natural comb, is chemical free, has high medicinal activity, is unheated and rich in bee bread (pollen).
We attempt at all times to operate a sustainable business, developed out of love and respect for the Natural world and for the ‘daughters of light’.
Thank you for visiting, Tim and Emma Malfroy

It is rare in our industry that we find a product that is transformative. Malfroy’s honey is Australia’s wild essence captured in a jar, unfiltered, unadulterated, exquisite. A single vision of one man who goes into the most remote areas of our beautiful land to capture what only nature can do. For me, a most extraordinary journey.

There is honestly no food I can think of that has intrigued, surprised and inspired me more than Tim and Emma’s Post Brood polyflora honey. A product of patience, respect for nature and sheer determination to an idea, my family has become obsessed with it...
Sometimes a great product is just a great product… and that is cool. Other times there is a true sense of the life and story of a product within. A different type of connection. Malfroys Gold somehow captures the magic of Tim’s knowledge, love and effort, right there in the jar. Its as much a pleasure eating and working with this amazing product as it is to continue to learn about the incredible process used to create such beautiful honey.

Tim Malfroy is an inspiration - from the ethics he upholds in his beekeeping to how he tirelessly advocates for the bees when talking to customers or students. It's been a pleasure and a privilege to work with Tim, we love how people come away from his conversations infused with not just knowledge but also the awe and the poetry of honeybees. When you buy Malfroy's Gold you're not just purchasing award-winning honey, you're supporting abundance - for both your family's health, and for the bees health, too.
The honeycomb regularly features on my menus. A favourite is a chunk of Malfroy’s Gold honeycomb just cut from the frame with Roquefort cheese. A match made in heaven.

There’s gold, and then there’s Gold. Emma + Tim's beeswax really is something else entirely. A honey fragrant song of Blue Mountains country, dense golden bars of goodness still vibrating with sounds of the bush... Thank you both, always, for letting us use your precious beeswax, it truly is my holy grail.

Natural beekeeping with Warré hives results in healthy bees and genuinely ethical and sustainable honey.
Last season, Ben from Leap Films visited for a few days to document our work in some of our Blue Mountains Apiaries. We have compiled a short vignette of what he captured and have lots more footage to work through, so stay tuned!
We call our honey ‘Wild’ as it is produced in an entirely natural way; by wild bees, in wild-type Warré hives, in a wild environment. We keep our bees in a bee-friendly manner for ethical reasons and believe the health and well-being of our bees greatly improves the quality, purity and nutritional integrity of the honey. Our Wild honey has been awarded multiple Gold Medals at the .delicious Produce Awards, is championed by some of Australia’s leading chefs and has a different flavour, texture and composition to conventionally produced honey.
Natural Beekeeping aims to provide for the needs of the bee colony above that of the beekeeper. It is a holistic approach based on respect and love for the bee colony. Bee-centric apiculture attempts to mimic how bees have thrived for millions of years without the aid of a keeper. Traditional/pre-industrial methods are combined with findings from modern scientific research to improve bee health, limit impact on the environment and provide the community with a medicinal food.
Our Wild honey is rich in bee bread and propolis, giving the honey a deep and complex flavour profile, unique texture and high medicinal activity. Our bioactive Post Brood Wild Honey contains more than 144 times the amount of pollen found in organic ‘raw’ honey and has a TA rating of 26+. Bee bread contains hundreds of species of beneficial bacteria and aids in gut health. Propolis is made by the bees from the kino (resin) exuded by the unique plants of the Blue Mountains world heritage area and is proven to be antibacterial and antiseptic.
Natural Beekeeping often leads to a complete re-thinking of conventional beekeeping management and hive design. The concept of an alternative style of apiculture that is bee-friendly and ethical resonated with us as our focus has never been on intensive honey production. Since 2009 we have pioneered the use of the bee-friendly Warré hive in Australia, adapting the design and methods for our conditions. The Warré hives we make are built from local salvaged timber and are designed to mimic a tree hollow, the perfect home for a honeybee colony.
Clare Smyth is using our wild honey at her acclaimed new restaurant Oncore in Sydney. She and her team graced us with a visit to our bees in the Blue Mountains!
Our Wild Honey was selected as one of two featured ingredients for the Service Challenge with Clare Smyth, was picked by the judges for the final MasterClass and used in the Pressure Test with Donato Toce too!
