Blue Mountains Polyflora (2020 Vintage)

Feels regal and very rich but the ‘eatability’ of this honey is extraordinarily high. An almost medicinal character here, but the main qualification of this honey is incredible texture and mouth-coating generosity all the while retaining a sense of freshness and lift. More subtle, savoury aromas, flavours make a big impact and linger emphatically.

Colour: Vintage gold, thick-cloudy
Texture: Dense, slippery, velvety, sticky
Aromas: Honeysuckle florals, lemon blossom, crushed eucalyptus leaf, stewed apple
Flavours: Preserved lemon, white chocolate, Parisian almonds, mint, alpine herbs and finishes with toffee-like flavours

Blue Mountains Polyflora (2019 Vintage - Sold Out)

A perfumed and pretty honey that feels pure and effortless to eat. A significant feature is the texture, creamy and lightly silty, which is distinct and compelling. While rich and concentrated, in a way, the honey glides. It is a significantly outstanding, detailed and premium product.

Colour: Vibrant gold, hazy-cloudy
Texture: Creamy, rich, lightly silty (pollen and propolis)
Aromas: Sweet-honeysuckle floral characters, stewed apples, jasmine, frangipani, lemon myrtle, white pepper
Flavours: Crème brulee, ripe citrus, lemon butter, white chocolate, honeycomb confectionary flavours, light spice, pleasing, gently nutty-bitter finish

Yellow Box

A complex and immensely satisfying honey with bold aromas and concentrated flavours. Dense, rich and generous, this is a hedonistic pleasure zone for honey enthusiasts, with pleasingly cloying texture, intensity of perfume and layers of texture. It finishes emphatically strong and lingers impressively.

Colour: Rich gold, hazy-cloudy
Texture: Creamy, glossy then silty finish
Aromas: Caramels, brown sugar, cinnamon, paperbark tree bark, sandalwood
Flavours: Crème brulee, preserved lemon, ginger, halva and candied citrus characters

Didn't know about you and honey until a priest gave me a bottle and it seems to heal my husband's sore throat. The other types of honey not so effective.
Coney, October, 2020
I think this is the most amazing honey I have ever had.
Damien, Sydney, July 2020
Thank you so much for my first order, I've really been appreciating and connecting to it greatly. I've showed my friends and family and they all agree that it is such awesome honey. Thanks again for such an honest product.
Lachlan, October, 2020
Would like to let you know that Malfroy's honey recently helped my husband and myself through colds and throat infections. It is very useful as medicine, along with all the cooking I do with it. I have even sent some back home to India, and it has been very well received. Keep it up
Snehal, Sydney, December 2018
Hello, wanted to write and tell you how appreciative I am to discover your honey. I am a chef but hadn’t heard about your product, until I saw it on Plat du Tour. I usually eat Pohutukawa honey, but not getting to NZ that finished long ago in the first lockdown. I’ve enjoyed all the honeys but especially the post brood. Thank you for such a great artisan product and a very informative website.
Catherine, Melbourne, August 2021
Wonderful stuff, totally unlike anything I’ve had before. Definitely a future pantry essential
