Blue Mountains Polyflora (2020 Vintage)


Feels regal and very rich but the ‘eatability’ of this honey is extraordinarily high. An almost medicinal character here, but the main qualification of this honey is incredible texture and mouth-coating generosity all the while retaining a sense of freshness and lift. More subtle, savoury aromas, flavours make a big impact and linger emphatically.

Colour: Vintage gold, thick-cloudy
Texture: Dense, slippery, velvety, sticky
Aromas: Honeysuckle florals, lemon blossom, crushed eucalyptus leaf, stewed apple
Flavours: Preserved lemon, white chocolate, Parisian almonds, mint, alpine herbs and finishes with toffee-like flavours

A perfumed and pretty honey that feels pure and effortless to eat. A significant feature is the texture, creamy and lightly silty, which is distinct and compelling. While rich and concentrated, in a way, the honey glides. It is a significantly outstanding, detailed and premium product.

Colour: Vibrant gold, hazy-cloudy
Texture: Creamy, rich, lightly silty (pollen and propolis)
Aromas: Sweet-honeysuckle floral characters, stewed apples, jasmine, frangipani, lemon myrtle, white pepper
Flavours: Crème brulee, ripe citrus, lemon butter, white chocolate, honeycomb confectionary flavours, light spice, pleasing, gently nutty-bitter finish

I purchased some of your honey at a food event at Centennial Park some time ago and loved it. This unique wild honey is produced by our bees from 100% natural comb in the ancient World Heritage listed Greater Blue Mountains area.

Our bee-friendly Warré apiaries are located in a diverse mix of eco-regions, providing an incredible diversity of nectar and pollen sources for the bees to forage.

The resulting honey has a complex, intense and ever-changing flavour profile.

The protected area is over one million hectares in size, rising from sea level to over 1000m in altitude and is fantastically rich in melliferous wildflowers (more than 1,500 flowering species have been recorded and 13% of the worlds Eucalypt species occur here naturally).

Importantly, and due to the large foraging radius of each bee colony, the honey is a distillation of the nectar from woodland, open forest, closed forest (rainforest), heathland, swampland, stream communities and the hanging swamps that occur on vertical cliff faces.

Due to this incredible diversity, no single jar of honey is the same; each speaks of the utterly unique landscape of the Blue Mountains. Our honey has a rating of TA 21+ (equivalent to UMF 21+ / MGO 899+). Eating small amounts regularly, straight from the jar should aid general health and wellbeing.

As our Wild honey is genuinely cold pressed from virgin comb it may be crystallised in the jar. Cold pressed honey often has a cloudy or opaque appearance and soft, thick, even texture with finely grained crystals.

Storage Instructions

Store in a cool, dry and dark place. Best temperature range for storage and serving is between 15 and 25°C.
